Happy Valentine's Day! Laura and I wish a very festive and happy Valentine's Day to all!

For dinner last evening, I made pan-fried Foster Farms boneless, skinless chicken breasts and garlic mashed cauliflower. This was the first time I made garlic mashed cauliflower, and it will certainly not be the last! The dish is incredibly delicious, and we intend to enjoy it often. The methodology is simple: I cleaned a large head of cauliflower and placed it in a large casserole dish. I peeled a head of Christopher Ranch garlic and scattered the cloves about in the cauliflower. I sprinkled herbs and spices over the cauliflower and garlic and cooked on high in the microwave for 10 minutes. I added two tablespoons of I Can't Believe It's Not Butter and an ounce of low-fat half-and-half. Laura then used an Oster wand blender to reduce the mixture to the consistency of mashed potatoes. The dish was wonderful!
