Arbor Day - Today is Arbor Day!

Arbor Day (from the Latin arbor, meaning tree) is a holiday in which individuals and groups are encouraged to plant and care for trees. Today, many countries observe this holiday.

Tostadas - Laura made wonderful tostadas last evening. She placed shredded boneless, skinless chicken breasts (that I earlier marinated with extra-virgin olive oil, Oriental rice wine vinegar, fresh grated garlic, fresh grated ginger, lime juice, ground black pepper, and ground cumin and grilled), cilantro, avocado, black beans, kernel corn, green onions, four shredded cheeses, and fresh roasted salsa atop tostada shells. This was a delightful meal!
