Born on this day in history: January 12, 1876 - Jack London (1876 - 1916) novelist. He was noted for books dealing with brutal realism, e.g. "The Call of the Wild" and "White Fang."

This morning is the coldest day on record for Corning, CA since 1562! At least it feels as if it is! Brrrrr! Fortunately, it is dry, and there was no ice on RAMMMMM's windshield this morning. It is, however, incredibly cold, and the wind is fierce. I long for summer!

For dinner last evening, I simmered pork sirloin chops, 14 large garlic cloves, a large white onion (quartered), a bell pepper (cut into 1/2-inch-wide slices, 8 medium white mushrooms (quartered), and Cajun seasoning in red wine in a 4-quart sauté pan. After this had simmered for two hours, I added a cup of medium-grain white rice and continued simmering for 45 minutes. It was delightful. The pork was fork-tender, moist, and delicious, and the rice and vegetables were very tasty indeed.
