Last evening's dinner: I simmered two boneless, skinless chicken breasts, a medium white onion (thinly sliced), four large white mushrooms (thickly sliced), and a medley of herbs and spices in a cup of Chardonnay for two hours. I added a cup of medium-grain white rice and continued to simmer for another thirty minutes. Laura added a can of cream of chicken soup and turned the burner to low. Thirty minutes later, Laura stirred the dish and declared it ready. It was delightful.
It is warmer this morning! It is very noticeably warmer, in fact: Yesterday, it was 52 degrees in my office at 7:30 AM. This morning, it was 58 degrees at 7:30 AM. Also, the fierce wind is gone! The sun is shining brightly, and spring will soon be upon us!
