We had leftover rigatoni and shrimp in garlic-ginger sauce last evening. I made a side dish that was particularly delightful: I poached cauliflower in salted, boiling water for 3 minutes, drained, immersed in cold water for 3 minutes, and drained. In a stainless steel mixing bowl, I combined the cauliflower, 3 Roma tomatoes (cut into bite-size pieces), and an avocado (cut into bite-size pieces), extra-virgin olive oil, rice wine vinegar, grated ginger, and seasonings. I stirred this mixture and refrigerated for 3 hours. It was wonderful.
