Foul Weather! Yesterday afternoon, the wind became fierce and plagued us throughout the night. I had intended to grill a London broil, but the wind was so strong it was not possible to do so. I cubed boneless, skinless chicken breasts from a previous meal. I diced red onion and Jalapeño and added to the chicken. I seasoned with adobo seasoning, ground Cayenne pepper, red pepper flakes, and celery salt and dressed with mayonnaise and lime juice. We made wraps with this mixture, using heart of Romaine leaves. It was a particularly delicious meal. Hopefully, the weather will allow us to grill the London broil tonight. The wind is not strong (yet) today, but it is overcast, gloomy, and rather chilly. Where did spring go?
