There are more than 900 known cheeses in the world, and they can all be classified by texture.
Here are the primary classifications and some examples: fresh cheese (ricotta); soft cheese (feta); semi-soft cheese (Fontina); semi-hard cheese (Gouda); hard cheese (Cheddar); double or triple crème cheese (Brillat-Savarin); blue cheese (Gorgonzola); washed rind cheese (Limburger); and bloomy rind cheese (Brie).
People have been making cheese for at least 8,000 years!

National Nachos Day, In the News, and Enjoy
National Nachos Day - Today is National Nachos Day! In the News - They walk among us! Enjoy - Relax and enjoy these images and videos!
Nachos are a popular Mexican dish that can be served as a snack, appetizer, or main course. The perfect recipe for nachos includes a huge plate of stacked tortilla chips topped with lots of melted cheese, salsa, sour cream, jalapenos, and guacamole!
Nachos originated in the city of Piedras Negras, Mexico.
One night in 1943, the wives of ten U.S. soldiers stationed at Fort Duncan arrived at a restaurant called Victory Club after it had already closed for the evening. Restaurant employee Ignacio "Nacho" Anaya quickly put together what he had left in the kitchen for the women, and called the dish "Nachos Especiales."
Word about this tasty treat quickly spread throughout Mexico and Texas. Anaya went on to open his own nacho restaurant and his original nacho recipe was printed in St. Anne's Cookbook in 1954.

People have been making cheese for at least 8,000 years, so the cheeses we enjoy today are all relatively young by comparison. Take Emmental (also known as Swiss cheese), for example. It has only been around since the first century BC!

Ignacio "Nacho" Anaya (c. 1894 – 1975) was a Mexican restaurateur credited as the inventor of nachos.
Anaya was living in Piedras Negras, Coahuila, Mexico, across the border from Eagle Pass, Texas, USA, and had a restaurant called the El Moderno there, when he invented nachos and served them at the restaurant as "Nachos Especiales."
The original form of nachos, as made by Nacho Anaya, included fried tortilla chips topped with melted cheese and jalapeños.

There are several theories about the origins of the cheeseburger. One story claims that the cheeseburger was created between 1924 and 1926 by a chef named Lionel Sternberger. As the story goes, a homeless man dining at Sternberger's restaurant in Pasadena, California, suggested the addition of a slice of cheese to his hamburger order. Sternberger complied, eventually added it to his menu, and the rest is history.
