A soufflé is a lightly baked cake made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert. The word soufflé is the past participle of the French verb souffler which means "to blow up" or, more loosely, "puff up"an apt description of what happens to this combination of custard and egg whites.
Every soufflé is made from two basic components: a French crème pâtissière base/flavored cream sauce or purée and
egg whites beaten to a soft peak meringue.
The base provides the flavor and the whites provide the "lift." Foods commonly used for the base in a soufflé include cheese, jam, fruits, berries, chocolate, banana, and lemon (the last three are used for desserts, often with a large amount of sugar).
When it comes out of the oven, a soufflé should be puffed up and fluffy, and it will generally fall after 5 or 10 minutes. It may be served with the top punctured and sauce poured onto it.
Soufflés can be made in containers of all shapes and sizes but it is traditional to make soufflés in ramekins. These containers vary greatly in size, but are typically glazed white, flat-bottomed, round porcelain containers with unglazed bottoms and fluted exterior borders.

National Marzipan Day, In the News, and Enjoy
National Marzipan Day - Today is National Marzipan Day!
Marzipan is a sweet, mold-able treat made from mostly sugar and almond meal or paste.
The most common shapes into which marzipan is molded are fruits and pigs. Persipan is very similar to marzipan, but instead of using almonds they use apricot or peach kernels. In Goa, cashews are used instead of almonds.
Although the origin of this treat is disputed, it has become very common and is sometimes found in the center of chocolate or molded into different figures and put on top of cakes.
In Italy one will encounter fruit-shaped marzipan. In Spain, one finds animal-shaped marzipan. In Greece, uncolored marzipan shapes are common. In Latin America, marzipan is enjoyed around Christmas time.

National Spumoni Day - Today is National Spumoni Day! Office Angel - Laura's co-workers presented her with this Office Angel. I am jealous. No one here at my office has ever given me a comparable gift! In the News - They walk among us! Enjoy - Relax and enjoy these images and videos!
This Italian dessert consists of layers of ice cream, whipped cream, candied fruit, and nuts.
It is typically made with three layers of flavor: chocolate, pistachio, and cherry. Each layer of ice cream is mixed with fruits and nuts.
Spumoni differs from ice cream in that it should always be sliced, never scooped.
First made in Naples, it is now popular in places with large Italian immigrant populations, such as the U.S. and Argentina.
Celebrate the delicious history and heritage of this treat and enjoy some spumoni on National Spumoni Day!

U.S. Coast Guard Day - Today is U.S. Coast Guard Day! Food - Friday afternoon, I departed mine office early and prepared pasta salad, potato salad, and chicken for our weekend's dining. I also produced a great quantity of hot salsa. Weather forecasts indicated the outside temperatures would keep us indoors! Mr. Nitro R/T -
Sunday morning, Laura surprised me greatly and pleased me incredibly when she announced she intended to wash Mr. Nitro R/T! He was filthy and craved soap and water. U.S. Coast Guard Day honors the military branch that protects our waters and shorelines. The U.S. Defense Department suggests that this day is largely an internal celebration for all Coast Guard personnel and their families, past and present. But, we'd like to encourage everyone to honor the brave members of this important branch of the military.
Celebrate U.S. Coast Guard Day by learning more about the responsibilities and functions of the U.S. Coast Guard. They are now playing an even more extensive role in Homeland Security to protect our country.
We salute Coast Guard personnel today and every day.
On August 4, 1790, the Revenue Cutter Service was created by the U.S. Congress. Congress authorized the construction of ten cutters. These ships were built to enforce U.S. tariff laws. The Revenue Cutter Service was the predecessor the U.S. Coast Guard. The name "Coast Guard" was first used in 1915.
Saturday morning, Laura and I were engaged in a fierce backgammon battle. Breakfast was quick, simple, and very tasty.
Laura produced a fine breakfast Sunday morning: Fried potatoes, sausage, eggs, and avocado. Topped with some of the wonderful salsa I had produced Friday, this was a feast!
