Oysters are shellfish, or "mollusks" found in both freshwater and saltwater. They often produce pearls.
In the ocean (or freshwater for some types), oysters sift food from the water around them. In doing so, they sometimes pick up a piece of sand or grit.
If that piece of sand or grit gets lodged in the oyster's system, the oyster reacts to the irritant by slowly secreting a substance called "nacre" around the sand. Ultimately, it develops into a pearl.
Seattle, Washington is the world's largest producers of cultivated pearls. Seattle is known as the "Oyster Capital of the World."

Peanut Brittle Day, In the News, and Enjoy
Peanut Brittle Day - Today is Peanut Brittle Day! In the News - They walk among us! Enjoy - Relax and enjoy these images and videos!
Brittle was one of the first types of candy ever made. Many ancient cultures that had access to molasses, honey, or sugar produced some form of brittle.
The first peanut brittle recipe appeared in an American cookbook, but the exact origin of the confection is uncertain.
According to one account, peanut brittle was a Celtic dessert. The Celts covered peanuts in sugar and baked them. This eventually evolved into a caramel bark.
Peanut brittle can be difficult to make. Most recipes call for a candy thermometer to allow the baker to regulate the exact temperature. The results can be affected by weather. If brittle is made on a humid day it will not hold its shape.
To celebrate National Peanut Brittle Day, make your own brittle or pick some up at your favorite candy shop!

National Hot Pastrami Sandwich Day, In the News, and Enjoy
National Hot Pastrami Sandwich Day - Today is National Hot Pastrami Sandwich Day! In the News - They walk among us! Enjoy - Relax and enjoy these images and videos!
Like most good life inventions, pastrami was created out of necessity. The preparation, which includes curing the meat, was ideal for saving valuable protein back when refrigeration did not exist. The Romanian word for preservea păstrais considered the root word of "pastrami."
Pastrami came to the U.S. via the Romanian Jews who settled in New York. Sussman Volk, a butcher, claimed to have introduced the hot pastrami sandwich in 1887 at his Delancey Street deli. As the story goes, in return for letting an acquaintance store some luggage at his shop, Volk got the man’s pastrami recipe.
At first, Sussman sold the meat in chunks, but then started slicing it thickly and putting it on bread with some mustard. He started selling out of the meat almost immediately and soon turned his butcher shop into a restaurant.
Traditional pastrami sandwiches are served on rye bread with brown mustard. Pastrami is most often made from the brisket cut of an animal. The meat is cured with a salty paste of spices like coriander, mustard seeds and black peppercorns, then smoked. Before being served, the meat is reheated.

The date was chosen to honor the United Nations General Assembly's adoption and proclamation, on 10 December 1948, of the Universal Declaration of Human Rights (UDHR), the first global enunciation of human rights and one of the first major achievements of the new United Nations.
The formal establishment of Human Rights Day occurred at the 317th Plenary Meeting of the General Assembly on 4 December 1950, when the General Assembly declared resolution 423(V), inviting all member states and any other interested organizations to celebrate the day as they saw fit.
The day is normally marked both by high-level political conferences and meetings and by cultural events and exhibitions dealing with human rights issues. In addition it is traditionally on 10 December that the five-yearly United Nations Prize in the Field of Human Rights and Nobel Peace Prize are awarded. Many governmental and nongovernmental organizations active in the human rights field also schedule special events to commemorate the day, as do many civil and social-cause organizations.
