On this day in history: January 29, 1975 - The men's room in a U.S. State Department office in Washington, D.C. explodes causing extensive damage to four floors. A group calling themselves the "Weather Underground Organization" takes responsibility for the blast by giving advance warning of the bomb to major news organizations earlier in the day.

Born on this day in history: January 29, 1954 - Oprah Winfrey (1954 - ) TV personality Oprah Winfrey is best known for "The Oprah Winfrey Show," a nationally syndicated program reaching more than 10 million viewers daily. Winfrey later took ownership of the program, and was at one point the world's only black billionaire. She is considered the most influential media figure in current history.

Last Evening's Pasta
Laura told me that she would be working late and would, therefore, not be attending worship rehearsal with me at Harvest Christian Center. I told her I would begin the evening's meal and that she could tend to it when she arrived at our home. I peeled and minced a large head of garlic, sliced a dozen crimini mushrooms, diced six large Roma tomatoes, and sliced a quantity of specialty ham. I began this sautéing in a large sauté pan. I tore several large leaves of fresh basil and set this aside. When Laura arrived, she tended to the sauce. When it reached the proper consistency, she added the fresh basil and cooked half a package of Barilla Thick Spaghetti al dente. She drained and added the spaghetti to the sauce, stirred, and allowed it to sit for five minutes. We then enjoyed what can only be described as incredibly delicious. A small quantity remained following our gormandizing, and it followed Laura to Chico this morning for her lunch.

On this day in history: January 28, 1978 - "Vampire of Sacramento" Richard Chase is arrested. Miscellaneous human organs are found in his refrigerator. He managed to kill six people, drinking the blood of two of his victims.

Born on this day in history: January 28, 1936 - Alan Alda (1936 - ) New York City actor Alan Alda is best known for his role as Hawkeye Pierce on the TV drama "M*A*S*H (1972-83). Alda then embarked on a successful career as a writer, director, and film actor. He received six Golden Globe wins, as well as 31 Emmy and two Tony nominations for his work. In 2004, his role in The Aviator earned him his first Oscar nod.

Sunshine!
The sun visited us yesterday. It was a wonderful (and much longed-for) respite from the rain that has plagued us for several days. It is sunny again today. Praise God! It may well become wet and cold again tomorrow, but for now we shall enjoy the warmth of the sun.

Panko-encrusted Chicken Breasts
Last evening, I produced one of our favorite dishes: Panko-encrusted Chicken Breasts.
[NOTE: People often ask me, "David, what is the difference between panko bread crumbs and everyday bread crumbs?" To this, I reply, "Panko bread crumbs are made from bread without crust."]
I butterflied Tyson boneless, skinless chicken breasts and separate the halves. I mixed panko bread crumbs with Pappy's, granulated garlic, ground Cayenne pepper, dry Italian seasoning, and dry parsley flakes. I rinsed the chicken in cold water and thoroughly coated with the panko mixture. I cooked the chicken in a large sauté pan, using medium-high heat and enough extra-virgin olive oil to coat the pan. I cooked the chicken until golden brown on both sides. Laura made a batch of thin fries in the conventional oven while I cooked the chicken. Panko-encrusted Chicken Breasts are delicious and nutritious. I highly recommend them.

On this day in history: January 26, 1998 - Residents of the Japanese town of Ito are attacked by a pack of raving wild monkeys. A total of 26 were injured and had to receive rabies shots. It remains unclear why the monkeys chose to attack.

Born on this day in history: January 26, 1958 - Ellen DeGeneres (1958 - ) Born in New Orleans, comedian Ellen DeGeneres became famous for her sitcom, "Ellen." In 1997, DeGeneres's character became the first lead in TV history to acknowledge her homosexuality on air. The revelation led to the show's cancellation in 1998, but she bounced back in 2001 with her own talk show. In 2009, she became a judge for "American Idol."

The Best Barbecue Pork Sandwich I Ever Ate!
Last evening, we enjoyed barbecue pork sandwiches that were unrivaled by any either of us had previously enjoyed! I simmered thick pork loin chops for two hours in 1/3 Chardonnay and 2/3 spring water. The loin chops had previously been seasoned with Pappy's, ground black pepper, and granulated garlic and had been pan-seared. After simmering, the loin chops shredded nicely, and I added 2/3 of a bottle of Stubb's Spicy Bar-B-Q Sauce. I added a tablespoon of Crystal Pure Louisiana Extra-hot Sauce and stirred. When Laura arrived, she took over the tending of the pork. After another hour of simmering in the sauce, the pork was ready for the table! We slathered the pork onto Oroweat Onion buns. Laura and I agreed that we had never enjoyed superior barbecue pork sandwiches! I highly recommend Stubb's Spicy Bar-B-Q Sauce!

On this day in history: January 25, 1971 - Charles Manson and three of his followers are convicted in Los Angeles of the Tate and LaBianca murders. All were sentenced to the gas chamber, with sentences commuted to life imprisonment when the death penalty was temporarily abolished.

Born on this day in history: January 25, 1981- Alicia Keys (1981 - ) Born in New York City, musician Alicia Keys burst onto the music scene in 2001 with her debut album Songs in A Minor, which went platinum six times . Keys' music has since gone on to win dozens of awards. Keys made the transition from music to film in 2008, earning an NAACP image award for her role in The Secret Life of Bees.
