Sierra Nevada Brewing Co. Winter Food & Beer Pairing Dinner

Sierra Nevada Brewing Co. Winter Food & Beer Pairing Dinner - Saturday evening, I accompanied Laura to the Sierra Nevada Brewing Co. Winter Food & Beer Pairing Dinner. It was a truly amazing event!

I bemoaned that I had neglected to bring my camera. Laura eschewed my petulance, however, and reminded me that "The best camera is the one you have with you!" She then took these photographs with her Motorola(r) Droid X smartphone!

CRAB COCONUT BISQUE - Dungeness crab, coconut broth,julienne vegetables, crispy banana, ginger, cilantro, and pepper oils.



This opening course was paired with a wonderful Sierra Nevada Kellerweis.

Executive Chef Micheal Iles talked with dinner guests, graciously accepted their praise, and answered their questions.

The tables were beautifully set and adorned with impressive floral displays.



LLANO SECO PORK RILLETTES - Ruthless gelée, pickled onions, fennelpollenbutter crackers. This was paired with Sierra Nevada Ruthless Rye.

Last Evening's Pasta
Laura told me that she would be working late and would, therefore, not be attending worship rehearsal with me at Harvest Christian Center. I told her I would begin the evening's meal and that she could tend to it when she arrived at our home. I peeled and minced a large head of garlic, sliced a dozen crimini mushrooms, diced six large Roma tomatoes, and sliced a quantity of specialty ham. I began this sautéing in a large sauté pan. I tore several large leaves of fresh basil and set this aside. When Laura arrived, she tended to the sauce. When it reached the proper consistency, she added the fresh basil and cooked half a package of Barilla Thick Spaghetti al dente. She drained and added the spaghetti to the sauce, stirred, and allowed it to sit for five minutes. We then enjoyed what can only be described as incredibly delicious. A small quantity remained following our gormandizing, and it followed Laura to Chico this morning for her lunch.

The weather was beautiful over the weekend—particularly yesterday, when the temperature reached 72 degrees by early afternoon. The sun was bright in the sky, the sky was blue, the clouds were white and scattered, the wind was mild, and the birds were singing. It was necessary to engage Mr. Nitro's air conditioning (albeit on the lowest fan speed) while Laura and I journeyed to Chico.

The weather forecast for the next several days does not look particularly inviting. The forecast for next Sunday looks very promising, however. This is of significant importance, since next Sunday is Sierra Nevada Brewing Co.'s Oktoberfest celebration. I shall be photographing the event. Good weather would certainly be wonderful for this event!

Friday evening, we had another of the new DiGiorno Ultimate Pepperoni pizzas we discovered the week previous. This is a wonderful pizza with an impressive crust. I highly recommend it.

Saturday morning, I made a large frittata, with 10 jumbo eggs, 1/2 package of fresh baby spinach, three Jalapeños, a medium white onion, a head of garlic, six large white mushrooms, 1/2 pound of deli ham, 9 slices of medium cheddar cheese, and herbs and spices. It was delightful. We were able to devour only half of this wonderful meal.

Saturday evening, we had steamed broccoli and grilled chicken breasts and red potatoes. I washed and dried eight Tyson boneless, skinless chicken breasts. I marinated them in extra-virgin olive oil, rice wine vinegar, lime juice, minced garlic, grated ginger, sea salt, cumin, and Red Monkey Lemon Pepper Spice. The chicken marinated for six hours in a large zip-lock bag in the refrigerator. We turned the chicken every hour. Laura grilled the chicken perfectly, creating perfect grill marks on the exterior and brushing it while it cooked with the leftover marinade. It was a wonderful meal. We froze two large breasts and have four breasts in the refrigerator for a meal later in the week.

Yesterday, while Laura performed nursery duties at Harvest Christian Center, I created a marinade using extra-virgin olive oil, balsamic vinegar, Merlot, minced garlic, Red Monkey Cajun Spice, sea salt, and ground black pepper. I marinated two thick top sirloin steaks. When we returned from Chico, we spoke of grilling around 6 PM. The day quickly grew late, however, and dinner became snacking. The steaks will get tossed onto the grill tomorrow night. Tonight, Laura has choir practice, and we shall have the remaining half of Saturday's frittata for dinner.

The weather today appears that it will be better than earlier forecasts indicated. It is sunny and warming and promises to be a beautiful day. While I realize the cold weather is nearing, I cherish these last warm days and long for spring!

It is time to return to the Caveman Crib! This incredible and hilarious site has recently been updated, so by all means, journey there when you have a good deal of time to spend there!

Friday evening, we had a Sicilian pizza from California Pizza Kitchen. It was outstanding—a thin, crispy crust and delicious meats and cheeses. It is small, however, and so good we shall have two pizzas when next we enjoy this delight.

Saturday, I made a large potato salad with red potatoes, celery, Jalapeños, kosher dill pickles, red onion, and bacon. I baked the potatoes in the microwave for 5 minutes then placed in the refrigerator for an hour before dicing. This ensures that the potato pieces will be firm. I made a dressing from light mayonnaise, light ranch dressing, spicy brown mustard, rice wine vinegar, dill pickle juice, and wasabi paste. Laura seasoned the salad with ground black pepper, celery salt, and sea salt. She mixed in the dressing and sprinkled the salad with ground paprika and wasabi sesame seeds. I poached some Sierra Nevada Brewing Co. beef ribs in the bag for two hours, removed from the bag, and refrigerated. Laura added ground Cayenne pepper to Jack Daniels barbecue sauce and used this to coat the ribs while she grilled them. It was a delicious meal.

Sunday, I pounded boneless, skinless chicken breasts and stuffed them with sliced mushrooms and sliced Jalapeños (the mushrooms and Jalapeños had been poached for 20 minutes and allowed to dry thoroughly prior to stuffing), Cajun seasoning, and pepperjack cheese. I coated the stuffed breasts with a mixture of Italian bread crumbs and Cajun seasoning. Laura baked the breasts in the oven. They were wonderful. The cheese melted nicely yet stayed inside the breasts. The potato salad from Saturday's dinner accompanied the chicken breasts.
